- 2 tsp. olive oil
- ½ medium red onion,
- chopped 4-6 cloves garlic finely chopped
- 2-3 cup sliced mushrooms
- Approx. 8 fresh basil leaves, finely chopped (I used a bunch!)
- zucchini, spiralized (approx. 4 cups)
- 4 Tbsp. basil pesto
Added to taste dried spices: Onion powder, garlic powder, paprika, oregano, rosemary, pepper and Himalayan salt
Heat oil in medium saucepan over medium-high heat. 2. Add onion and garlic cook, stirring cook, stirring frequently. 4. Add mushrooms and basil; cook, stirring frequently, for 3 to 5 minutes, or until mushrooms release liquid. 5. Add zucchini and dried spices to onion mixture; cook, stirring frequently, for 2 to 4 minutes, or until heated through. 6. Add pesto; mix well. 4-6 servings 😊
